Breakfast- 1/2 watermelon
Lunch- almost 1/2 watermelon
Dinner- wedge of watermelon, raw marinara sauce served over shredded zucchini, Romaine lettuce, sliced cucumber, with avocado and sliced black olives
Jennifer Cornbleet's marinara sauce was so delicious on Thursday that I had to make it again on Friday. It was so satisfying that as I spooned up the last drop from the bottom of the bowl I just savored it, already thinking about when I would prepare it again.
I varied it on Friday. I have some pine nuts that need to be eaten so I tossed in a handful or more(I didn't measure.) and processed the sauce with the pinenuts. The result was a creamy consistency that bore a faint resemblance to a cooked sauce that has had a healthy measure of parmesan cheese stirred into it.
I've gotta say that I really like the three raw meals a day with no snacks plan that I am currently following. I need to plan ahead, but even so, I feel less preoccupied with eating; it takes up less space in my thinking and in my day. I eat what I need, I enjoy it, and it's done.
