Mock Peanut Suace goes better with juicy non-starchy vegetables...
Breakfast- 14 large fresh apricots
Lunch- 1 slice Miss Lillian's Yam Pie, 1 slice Miss Lillian's Cheesecake, 1 pkg. Pure Food & Wine spicy Macadamia nuts
Dinner- 1 cucumber and 4 tomatoes sliced and mixed with Mock Peanut Sauce
The mock peanut sauce that I made for Saturday night was tasty. It's really rich though and I didn't care for it with the zucchini. Zucchini is a high starch vegetable and combined with the mock peanut sauce, the combination was too heavy for me. I liked it much better with the sliced tomatoes and cucumber.
