Breakfast- a large nut milk smoothie: fresh homemade Hazelnut milk, bananas, dates, and spices
Lunch- 4 sliced bananas, 3 tablespoons tahini, 3 tablespoons, 3 tablespoons sun-dried shredded coconut
Dinner- 2 packages Go Cashew Curried Cashews, 1 head Romaine lettuce, 1 medium tomato
The coconut I ate for lunch was from Go Coconut, distributed by International Harvest who I have not yet located a web address to get more information about them. Anyway I really like their coconut, it's shredded in long thick chewy shreds, it's organic and sun-dried, not machine dehydrated. Eating it is a notably different experience, one I like.
