Raw Food Open Faced Sandwiches, my new favorite meal...
Breakfast- 2 cantaloupe
Lunch- 6 large Navel oranges
Dinner- 3 Champagne mangoes; 2 pieces Life Force Sun-Flax Italian bread, each layered with homemade macadamia sun-dried tomato pate, sliced tomatoes, sliced cucumbers, and Real Pickles Kimchi; 1 large cucumber
The pate was delicious. I made it with odds and ends that had accumulated in the kitchen and refrigerator- Macadamia nuts, sun-dried tomatoes, a few cashews, celery, mushrooms. I put everything in the food processor and processed it until it was smooth. I added a little poultry seasoning and black pepper. It turned out really well; I wish I had written the amounts of each ingredient.
