Tomato Soup, Todd's...

Todd's Tomato Soup

This recipe comes from Lynda Carter at Alive and Raw.

Equipment:

  • Blender

Ingredients:

  • 4 ripe Roma Tomatoes
  • 1/2 cup soaked sun-dried tomatoes
  • 1/4 cup olive oil
  • 3 sprigs of basil
  • 2 sprigs of oregano
  • 2 cloves of garlic
  • 1 date
  • 1 pinch of cayenne pepper
  • 2 cups pure water

Blend all ingredients until creamy and smooth. Allow to sit in the sun for 20 minutes to warm. Lynda is great with providing nutritional information:  Roma Plum Tomato(2 medium plum tomatoes)- 36 calories, 5 mg sodium, 7 gram carbohydrates, 1 gram protein, 1 gram fat, 1 gram dietary fiber.
